After overindulging during the holidays it was time to have a major reset-I’ll miss you cookies and wine, but momma needs a BREAK. My husband conveniently gifted me a Peloton bike for Christmas this year and the timing couldn’t have been better.

Quick review of the bike (I get messages often about it) -I used to love working out, I went 3-5 times a week, swore by SoulCycle, and loved a good reformer class. Insert the “I worked out until I was 9 months pregnant and haven’t really gone back to the gym since” excuse (Campbell is 16 months- that’s basically two and it means I need to get my shit together). I do feel like the world should know that I made a 6am SoulCycle class twice over those 16 months and they were damn good classes. I digress…the bike is awesome! Over 8000 spin classes available out of the convenience of my small SF apartment, whenever I want – it’s exactly what I need.

We’ve committed to doing Whole30 for the month of January-this means no sugar, alcohol, dairy or carbs. My husband swears by it and I’m along for the ride. I’ve also been working out 4-5 days a week (thank you husband and Peloton). I’ve been posting a few recipes we have been cooking up this week on insta story, and after receiving several requests for recipes, I thought I’d start with the chili because it was the easiest and maybe the best:

Crockpot Whole30 Chili-This recipe was SO easy and delicious
  • 1 lb ground turkey (or beef)
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 medium onion, diced
  • 1 can (14.5 oz) diced unsalted tomatoes
  • 2 cups beef broth, low sodium
  • 1 tablespoon homemade chili seasoning see below
  • salt, to taste
  • Instructions
    1. Brown the turkey over medium high heat.

    2. Add the turkey and remaining ingredients to a slow cooker.  Cook on Low for 6-8 hours or High for 3-4 hours.  Adjust seasonings to taste.

    3. Homemade Chili Seasoning Blend:  5 Tablespoons chili powder, 2 Tablespoons cumin, 2 Tablespoons garlic powder, 2 Tablespoons oregano, 1 Tablespoon paprika (or smoked paprika), 1 1/2 Tablespoons onion powder, 1 teaspoon black pepper, 2 teaspoons salt.  Store in a mason jar or tightly sealed container.

    For the Instant Pot
    1. Set Instant Pot to saute.  Spray with cooking spray and add ground turkey, stirring until cooked.  Add remaining ingredients to the pot.  Set to Manual for 10 minutes.  When cycle is complete, allow for natural release of pressure.  Serve with favorite toppings!

    Recipe Notes

    **This recipe makes a  thinner, more broth-like chili.  If you prefer a thicker chili, add a can of crushed tomatoes and additional chili seasoning!
